Over the years I have seen many “Over the top” chili recipes on Youtube, but I never saw one done with chicken! One of the great uses of the X rack on the Kamado joe grills is it makes it very easy to use a cast iron pot to make things like this. Getting a nice smokey flavor on the meat and in the pot makes this chili “over the top”, but the name references how the meat is cooked over the pot to allow the juices to be incorporated back into the pot while cooking and smoking. Recipe
1 pound seasoned chicken thighs or breasts
2 cans Ro-Tel
1 large can diced tomatoes
2 cans great northern beans
1 medium onion chopped
1/2 green pepper chopped
1/2red pepper chopped
2 cups chicken stock
1 tbs all purpose seasoning
chili powder to taste
