This is my own version of white chicken chili made in an instant pot in only 14 minutes. It has a southwestern taste. Ive told a few people that I find it easy to compare to “if taco bell made chili, this would be it”. It is really really good and easy peasy to make.
I forgot to say in the video, I have also served this with sharp cheddar cheese, pepperjack cheese, and fiesta cheese and they all taste great with it if you want to make it over the top, add about 1/3 cup of cheese to the top of it when you serve it. Also, something about it cooling down overnight in a refrigerator and then heating it up as leftovers really makes the flavors pop even more along with gives the cream cheese time to do its thing which is thickens the sauce.
