Makes 6-7 portions.
Ingredients:
Beef or veal (1.2 kg / 2.7 lbs)
1 red bell pepper
1 yellow bell pepper
1 large yellow onion
2 chili peppers
Garlic (3-4 cloves in chili, and 1-2 in the sauce)
2 cans of beans (preferably in tomato sauce)
2 cans of corn
Cheese (optional)
Sauce:
3 tomatoes
Tomato paste (140 grams / ~5 oz.)
BBQ sauce (50 grams / ~1.7 oz.)
Mayo (50 grams / ~1.7 oz.)
Chili ketchup (50 grams / ~1.7 oz.)
Ketchup (50 grams / ~1.7 oz.)
Mustard (1-2 teaspoons)
You can add some other sauce you like as well.
Seasonings (red and black pepper, a mix of peppers, paprika, etc.,) to taste.
Instructions:
1. Cut beef into bite-sized pieces, trim the excess fat if necessary.
2. Fry the meat on low to medium-low fire (to brown it a bit). Add seasonings to taste, as you fry it.
3. While the meat is frying, chop an onion.
4. Heat oil in a large pan. Throw in onions, cover. Saute on low fire.
5. Chop bell peppers, add to the onion.
6. Chop chili peppers, add to the onion. Keep the lid shut all the time.
7. Squish and chop garlic, add it in the pan to the rest of veggies.
8. In the process, add seasonings you like to taste.
9. While veggies and meat are frying, make the sauce.
10. Cut tomatoes in little cubes.
11. Fry them on a low fire until they release the juices and get slightly roasted and soft.
12. Meanwhile, make the sauce.
13. Mix tomato paste, BBQ sauce, mayo, mustard, ketchup, chili ketchup. (or any other sauces you like, just be sure to use tomato paste and BBQ sauce.
14. Add seasonings to taste and crush 1-2 garlic cloves in there. Mix well. If the sauce is slightly sour, add some sugar to balance the taste.
15. Add tomatoes with the juices to the sauce. Mix well together.
16. When the meat is brown and slightly soft, add it to the veggies in the pan.
17. Add the sauce and mix well with the rest of the ingredients.
18. Simmer for 50 minutes.
19. Add 2 cans of corn and 2 cans of beans.
20. Mix in and simmer for another 10 minutes.
21. On the go, try for seasonings, add more if necessary.
22. Serve hot with some grated cheese.
