Chilli Garlic Bites

Ingredients for Mince Mixture

Mince chicken 300 gm
Garlic finely chopped 1 tbsp
Spring onion ½ cup finely chopped
Black pepper 1 tsp
Salt ½ tsp
Bread slices 3 soaked in
Milk ¼ cup
Cheddar cheese grated ¼ cup

Ingredients for Coating

Flour 1 cup
Salt and pepper ½ tsp each
Bread crumbs as required
Oil for deep frying

Ingredients for Flour Paste

Water 1 cup
Flour 3 tbsp

Ingredients for Chili Garlic Sauce

Butter 2 tbsp
Crushed garlic 1 tbsp
Crushed red pepper 1 tsp
Dark soy sauce 2 tbsp
Honey 3 tbsp heaped
Brown sugar 2 tbsp
Chicken powder ½ tsp
Water 2 tbsp
For Topping

Spring onion leaves finely chopped 3 tbsp

METHOD

Put all the ingredients for chicken in a chopper and grind them together, grease your hands and shape the mixture into small size balls, put on a tray and freeze for 1 hour. In a plate, take some dry flour, add salt and pepper to it. In another bowl make flour paste with water and flour. In the 3rd plate spread bread crumbs. First coat the balls in dry flour, then dip in flour paste, finally coat them well in bread crumbs. Deep fry the chicken balls till crisp and golden, remove on a paper towel.

METHOD FOR SAUCE

Heat butter in a pan, fry chopped garlic and chili flakes for few seconds, add in all the remaining ingredients for sauce, cook on low flame till sauce thick, if it gets too thick add 2 tbsp water, toss the fried balls with prepared garlic sauce, arrange on a platter, garnish with some spring onions on top and serve.

Chicken Tandoori Wings

Ingredients

Chicken wings 1 kg with skin

Ingredients for Seasoned Flour

Flour 2 cups
Salt ½ tsp
Tandoori masala 2 tbsp
Chicken powder 1 tsp
Oil for deep frying

Ingredients for Tandoori Sauce

Butter 2 tbsp
Oil 3 tbsp
Garlic paste 2 tsp
Onion finely chopped 1 cup
Flour 2 tbsp
Tandoori masala 2 tbsp
Roasted and ground cumin 1 tsp
Mayonnaise ½ cup
Milk ½ cup
Water ¼ cup
Black pepper coarsely ground ¼ tsp
Chopped spring onion ¼ cup

METHOD

Mix together ingredients for seasoned flour, toss chicken wings in flour very well, deep fry till crisp, make sauce by heating butter and oil together, add chopped garlic and onion, fry till soft, add in tandoori masala with ¼ cup water, fry for a min, add flour and roast it along with other ingredients. Finally add in water, milk and mayonnaise, mixing well so no lumps are formed, add in all the rest of ingredients in the sauce, boil, toss the fried wings in this sauce and serve.
