The Calgary Stampede is known as the “Greatest Outdoor Show on Earth”, and along with many things that make the Calgary Stampede world famous, is their chili cook offs. My chili is inspired by the chuckwagon races, and a good hearty CHUNKY chili. No ground beef here. Beautiful sirloin beef is cut into chunks, along with spices and aromatics, in which a couple of them may surprise you. Everyone loves chili, but once you try my version, you will fall in love with it all over again. Serve with your choice of toppings if desired, and some garlic cheese bread, corn bread, tortilla chips, or whatever floats your boat!

YOU NEED:
1.5 kg sirloin beef (or beef of choice), cut into small chunks
2 med. onions, diced
2 med. green bell peppers, diced
250 g mushrooms, sliced
3 x 450 g cans of red kidney beans, drained and rinsed
2 x 450 g cans of diced tomatoes in their juice
2 Tbsp. garlic granules
2 Tbsp. smokey paprika
2 Tbsp. onion powder
2 Tbsp. ground cumin
2 Tbsp. mild chili powder
1 Tbsp. chipotle powder (or a few dashes of your favourite hot sauce)
1 spoonful of good instant coffee
1-2 spoonful’s of cacao powder
salt and pepper to taste
vegetable oil for sautéing
