Cook Vegan Chili With Me *i get in my feels*

Watch me cook a 3 bean vegan chili while I update you on the last few weeks of my life.

Serves 6 people
Ingredients:
– 2 carrots
– 2 small yellow onions
-olive oil
– can of diced tomatoes
– 2 cups of water
– can of red kidney beans
– can of white kidney beans
– can of chickpeas
– flat-leaf parsley
– 1 clove of garlic
– pine nuts
– salt and pepper to taste

Recipe:
1. chop carrots and onions. Sauté in large pot over medium heat for 3-5 minutes
2. add diced tomatoes with liquids, 2 cups of water, salt and pepper to taste. Bring to a boil
3. add all 3 beans. Reduce heat to medium and let simmer
4. add minced garlic, chopped parsley, pine nuts. Optional: olive oil, salt and pepper
