Easy stove top White bean chicken chili a budget friendly dinner recipe with the best flavors!!!! Easy white bean chicken chili can be served with rice, cornbread, and etc. Chicken chili with beans is a great budget friendly dinner recipe that can be cooked quick & easy stove to table ready in 30 40 mins or less. Homemade White bean chicken chili is truly flavorsome and the added elements can be found in your fridge and pantry. Homemade White chicken chili doesn’t require many ingredients; however, the biggest factor is your desired meat of preference, chicken, ground, turkey, steak, chuck, and etc. Chicken chili with beans can be cooked on a stove top, in a slow cooker, a dutch oven, and yes even a pressure cooker. I personally love chili but if you’re looking to pull back on the budget this budget friendly recipe is well worth it. Cooking chili isn’t too much of a science but you do need to ensure that you’re cooking it with love and patience. Homemade chili being cooked on the stove top on a low simmer it’s a lingering aroma that gameday, lunch/dinner and its packed with love and unlimited flavors. Chili, what can I say is one of my absolute favorite go to dishes. Chili after all is a year around enjoyment in my household. Homemade chili can be enjoyed with chili dogs, french fries, burgers, chili stuffed potatoes, chili fritos you name it, it’s a winning combination!!!

Ingredients: store bought rotisserie chicken/boneless skinless chicken thighs/leg quarters/drumsticks use whatever you have, 3 carton chicken broth, garlic powder 5 TBSP, Black & White Pepper 6 TBSP, Cumin – 6 TBSP, Mild Verde Salsa – 2 TBSP, 1 cup Tomatillo salsa/green enchilada sauce 1-2 packets or 1 medium jar, Oregano – 1 TBSP, 3 cans of Northern beans/white chili beans, 4 cans sweet whole corn kernels, shredded cheese to garnish (your preference, 2-3 limes, 3-4 stalks green onions chopped.

Directions:

– pull/shred store bought rotisserie chicken on a plate and set aside.
If cooking raw chicken 1st Wash & rinse and add to a medium pot of boiling water and boil until chicken is cooked – remove from water and pull/shred and continue steps as follows:

– chop/dice – 2 small yellow onions, saute on the stove top in a medium-large pot for 3-5 mins on medium high heat, then add the following ingredients in the next step.

– along with the sauteed’ onions in a large pot add 3 cartons of chicken stock bring to a boil, reserve 1 cup of chili broth along with 1 can of beans.

******* add 1 can of drained beans to a blender/food processor add the 1 cup of reserved chili broth and puree, set aside.

Cook instructions

– in the pot of sauteed onions and broth add the following: shredded/pulled chicken, garlic powder 5 TBSP, 6 TBSP Black & White Pepper, 2 TBSP Verde green salsa, add 1 room temp Philadelphia cream cheese, 1 cup of Tomatillo/green enchilada salsa 1 can/jar, 6 TBSP Cumin powder 1 TBSP Oregano, bring to a rolling boil, then reduce heat immediately and cook on low simmer for 40 mins – 1hr stirring occasionally every 5 mins until done. The last 15 mins of cook time add the remaining 2 cans of Northern beans/White beans. Grate zest of 1 lime into chili and squeeze lime juice into chili mix, serve and enjoy!!
