Pumpkin Chili & Maple, Yogurt Cornbread

Easy Chili that I’ve made for years – perfect for when you want chili but don’t have 3-5hours to slow cook. The yogurt cornbread is made from scratch and doesn’t even need toppings.

Ingredients:
Chili:
1 – Onion (diced)
1 – Bell pepper (diced)
5 – Garlic cloves (crushed)
1 tsp – Cumin Seed
1 tsp – Oregano
1 1/2 lbs – Ground Beef
3 Tbsp – Chili Sauce (or sub chili powder)
1 can – Pumpkin Puree
1 can – Tomato Sauce
1 tsp – Honey
2 tsp – Pumpkin Pie Spice (cinnamon, ginger, lemon peel, nutmeg, clove, cardamom)

Cornbread:
1 cup – Flour
1 1/2 cup – Corn Meal
1 Tbsp – Baking Powder
1 tsp – Sea Salt
1 cup – Yogurt (unsweetened/Greek)
1 cup – Milk
6 Tbsp – Butter (2 in baking pan / 4 in batter mix)
