Recipe:
200 g macaroni pasta
180 g raclette cheese
125 g mozzarella cheese
180 ml plant-based milk
150 g kimchi
3 tbsp olive oil
1 tbsp all-purpose flour
green chili pepper
salt
black pepper
1) Start by cooking macaroni pasta according to instructions. Drain water and set it aside.
2) Transfer Kimchi into a bowl and chop it into bite-sized pieces using scissors.
3) Heat a frying pan over medium heat. Add some oil and stir-fry Kimchi for 2–3 minutes. Transfer the stir-fried Kimchi into a bowl and set it aside.
4) Combine olive oil and flour in a pot over medium heat. Whisk in the plant-based milk until it’s nice and thick.
5) Add cheese and pasta. Season with salt and pepper.
6) Add Kimchi. If you want to enjoy more Kimchi flavors, add Kimchi without stir-frying.
7) Transfer the mix to a baking dish and top with mozzarella cheese and sliced green chili. 8) Bake for 15–20 minutes at 180 degrees Celsius.
