miso broth with somen noodles + crispy tofu ~
As all of you know, I love noodles 🙂 so here’s another easy noodle recipe that takes me 15 minutes to make.

dashi broth (tutorial in previous video)
white miso paste
firm tofu, cut into triangles and pressed to remove moisture
potato starch
frying oil
somen noodles
salt + fish sauce as needed
toppings —
sautéed mushrooms
scallions
chili oil
hot sesame oil
Add a thin layer of oil to a pan on medium high heat. Dredge the tofu in potato starch and fry on both sides til golden brown. Next heat up the dashi broth and add a spoonful of miso paste. It helps to add the miso paste through a sieve so it dissolves easier. Also remember that miso paste should never be boiled because it destroys the nutrients (miso is a fermented food with healthy living bacteria). Bring a pot of water to a boil and add the somen noodles, then turn down the heat and cook til soft — about 2 to 3 minutes). Season with salt and/or fish sauce as needed and top with sautéed mushrooms, scallions, chili oil and hot sesame oil.
