Vegan food doesn’t need to be complicated or expensive. This vegan chili is a staple in my house.
I usually make it on Sunday, so I have it all ready for my meals during the week. Served with rice, bread or on its own – it is simply delicious.
You can customize with anything to make it your own (few ideas below). Great way to use up any leftover veggies you have at the moment. You can add beans, vegan meat, or any veggie.
This time I made the simplest option but read below some add-ons that are perfect to use in your own version.
Recipe here:
– 5 cans of bean ( used red kidney beans, pinto beans and black beans)
– 200g of vegan minced meat
– 1 can diced tomatoes
– ½ medium onion chopped
– 1 tbs olive oil
– Spices: salt, pepper, chili flakes, cumin, paprika
1. On medium heat add olive oil and sauté onion with vegan meat until golden brown.
2. Add spices and cook them for few minutes.
3. Add canned tomatoes and beans.
4. Cook for at least 30 minutes. Enjoy!

– Sweet potatoes
– Spicy chilis
– Carrots
– Fresh corn (shaved off the cob)
– Butternut squash
– Bell peppers
