Chicken Angara:

Ingredients:
Chicken 500 gm
Yogurt ½ cup
Ginger garlic paste 1 tbsp
Turmeric powder ¼ tsp
Red chili powder 1 tbsp
Coriander powder ½ tbsp
Cumin powder 2 tsp
All spice powder 1 tsp
Red chili paste 1 tbsp
Salt to taste
Fried onion (grated) ¼ cup
Tomato paste ½ cup
Almond paste 3 tsp
Clarified butter ½ cup
Fresh Cream 3 tsp
Ginger and fresh coriander for garnish
Coal for smoke

Method:
In a bowl add chicken pieces, yogurt, ginger garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, all spice powder, red chili paste and salt. Mix well and set aside. Then in a wok heat clarified butter add marinated chicken, cook well. Now add tomato paste, fried onion and almond paste. Cook properly until the chicken gets tender. Then add fresh cream, mix well. Now give a coal smoke. In the end garnish with ginger and fresh coriander.

Mutton Roghan Josh:

Ingredients:
Mutton ½ kg
Oil ½ cup
Ginger garlic paste 1 tbsp
Tomato puree ½ cup
Tomato paste ½ cup
Onion (chopped) ½ cup
Red chili powder 1 tbsp
Coriander powder 1 tbsp
Salt to taste
Cumin 1 tsp
All spice powder 1 tsp
Yogurt ½ cup
Butter 2 tbsp

Method:
In a wok heat oil and fry onion. Then add mutton and ginger garlic paste. Cook well. Now add tomato puree, tomato paste, red chili powder, coriander powder, salt and cumin. Cook well. Then add yogurt and cook the mutton until it becomes tender. Now add ½ cup water and all spice powder. In the end add butter and serve hot.
