My Awesome Easy Chili Recipe…….a bit different from what you're use too

What’s great about chili is you can enjoy it no matter what the weather is. However, it’s exceptionally enjoyable on cold winter days.

I normally just throw my chili together without measuring. I’ve taken the time to put together the following recipe. As with any recipe, you can change to your liking

Chili Recipe

Ingredients
MEAT

* 2 lbs ground beef
* 1 lb lean steak cut into small cubes
* 1 pound bulk Italian sausage (mild, casings removed)
* 2 tablespoons bacon grease

VEGETABLES
* 1 onion diced
* 1 1/2 green bell pepper seeded and diced
* 1 jalapeno seeded and finely diced
* 4 cloves garlic minced

CANNED ITEMS

* 14.5 oz crushed tomatoes canned
* 14.5 oz roasted diced tomatoes with juice
* 2- 15 oz red kidney beans canned, drained & rinsed
* 1 can beef broth
* 1 cup beer
* 1 -2 tablespoons Worcestershire sauce
* 1 small can tomato paste
* small can of Chipotle peppers in adobe sauce (chopped sauce reserved)

SEASONING

* 2 tablespoons chili powder
* 1 tsp cayenne powder
* 2 tablespoon cumin
* 1/4 tsp garlic powder
* 1 tsp onion powder
* 1 tsp oregano
* 1 tsp smoked paprika
* 1/2 tablespoon brown sugar optional
* salt and pepper to taste

Instructions

Add bacon grease to a large pot and sweat down the bell peppers, jalapeno, onions and garlic
Add tomato paste and cook for about 3-5 minutes. This will cook off the raw tomato flavor
Add the Sausage, break up and brown slightly. Add chop meat, brown slightly. Lastly, add the cubed meat and mix well
Add all seasonings from the list m ix well and let cook for about 3-5 minutes
Add the beef broth, beer, Worcestershire sauce, diced tomatoes, crushed tomato and chopped chipotle peppers in adobe sauce, mix well
Bring to a boil. Reduce heat and simmer uncovered 60 minutes (stir occasionally to ensure not sticking) or until chili has reached desired thickness.
Add the rinsed kidney beans, mix well and let cook (simmering) for about 30 minutes. If you like your beans a bit softer, cook to your liking

Serve with any of the following toppings:
Sour cream, Cheddar or Monterey jack cheese, red or green onion, cheese, jalapenos, cilantro, avocado & lime wedges, tortilla chips
