INGREDIENTS
3 cans starkist chunk light tuna in water
1/2 of a red onion, chopped
1/2 of a green pepper, chopped
1 seeded and diced jalapeno
4 cloves garlic, minced
2 tbsp flour
3 cups beef stock
2 tbsp brown sugar
salt
pepper
1 tbsp cumin
1 tbsp chili powder
1/2 tsp fennel seeds
1 can fire roasted tomatoes
3 cans season black beans, rinsed and drained
1 can sweet potatoes, cut into large chunks
DIRECTIONS
In a large skillet, cook sausage, onion, pepper and jalapeno over medium heat for 8 to 10 minutes or until sausage is thoroughly cooked; add garlic cook 1-2 min longer. drain off excess fat. Add flour and stir well. Stir in beef stock, brown sugar, salt, pepper, cumin, chili powder, fennel seeds. Stir to mix. Add in tomatoes, bean and sweet potatoes.
Bring to a boil. Reduce heat and simmer 30 minutes
