Chile Lime Shrimp Bowls
Prep time: 15 minutes
Cook time: 5 minutes
Ingredients
1 c. sour cream
1 avocado
1 c. cilantro
2 tsp. Garlic powder
½ tsp. Salt
¼ c. lime juice
1/2 c. cotija cheese
2 lbs. Shrimp, cooked
¼ c. olive oil
¼ c. honey
2 tsp. Chili powder
1 tsp onion powder
1 tsp garlic powder
1 tsp. Salt
1 Tbs. lime zest
1 Tbs. lime juice
2 Tbs. olive oil
4 c. rice, cooked
1 avocado
½ c. cotija cheese
1 romaine lettuce
Instructions:
1.For the dressing, in a blender combine, sour cream, avocado, cilantro, garlic powder, salt, lime juice, and only ½ c. cotija cheese.
2. Store in a jar in the fridge until ready to eat.
3. In a large bowl combine shrimp, ¼ c. olive oil, honey, chili powder, onion powder, garlic powder, salt, lime zest, and lime juice. Let marinade for at least 15 minutes.
4. In a large pan over medium heat, cook shrimp. Probably just a couple minutes on each side.
5. Serve family style letting everyone build their own bowls and enjoy with friends and family.
