Dubu jorim is tubu braised in a savory-spicy sauce and pan fried with caramelized onion, garlic, and green onions. and Dubu kimchi is a Korean dish consisting of tofu and stir-fried kimchi. Soft, warm, blanched tofu is served with well-fermented, tangy baechu-kimchi stir-fried with pork, makes a well-matched anju for either soju or makgeolli.
📍Ingredients
450g tofu
20g Asian leek
200g kimchi
1 clove garlic
1 red chili pepper
1 green chili pepper
📍Recipe
-Dubu Jorim
1. Drain and remove the tofu from package. Remove excess water using paper towel.
2. Slice tofu into rectangles.
3. Slice Asian leek in half lengthwise and finely chop.
4. Remove stem of red chili pepper. Slice pepper in half lengthwise and finely chop. Remove stem of green chili pepper. Slice pepper in half lengthwise and finely chop.
5. Slice off brown end of clove. Mash garlic with side of knife. Mince garlic.
6. Add 1 tablespoon of vegetable umami, 2 tablespoons of soy sauce, 1 tablespoon of sugar, 1 teaspoon of red pepper powder, chopped Asian leek, chopped red chili pepper, chopped green chili pepper, minced garlic, and 1 teaspoon of toasted sesame seeds.
7. Stir all ingredients well.
8. Add 1 teaspoon of cooking oil and sesame seed oil to preheat new pan.
9. Gently place tofu pieces in pan.
10. Cook tofu until both sides are golden brown.
11. Pour seasoning evenly over cooked tofu pieces.
12. Spoon sauce over tofu.
13. Pour remaining seasoning on top of tofu and Sprinkle sesame seeds on top.
-Dubu Kimchi
1. Cut kimchi into 3cm to 4cm slices.
2. Preheat pan and drizzle with oil. Add kimchi and 2 teaspoon of vegetable umami to pan.
3. Add 1 teaspoon of cooking oil and sesame seed oil to preheat new pan.
4. Gently place tofu pieces in pan.
5. Cook tofu until both sides are golden brown.
6. Plate cooked tofu and pan-fried kimchi together.
7. Sprinkle black sesame seeds over tofu.
