Serves 5-6
Ingredients:
1 lb ground turkey (or substitute with any other preferred protein)
1 lb sliced mushrooms
1 large yellow onion (diced)
1 bell pepper (diced)
1-2 jalapenos (diced)
3-5 cloves of garlic (minced)
3 teaspoons of chili powder
2 teaspoons of cumin
1 teaspoon paprika
1 teaspoon cayenne pepper
1 teaspoon of salt
1 large can (800 ml) of peeled roma tomatoes
2 15oz cans of tomato sauce or crushed tomatoes
3 tablespoons hot chili sauce
Optional – a couple dashes of Worcestershire sauce
Instructions:
Heat large pot on medium high heat. Add in olive oil to coat bottom of the pot. Saute onion, garlic and pepper mix until slightly soft. Add in ground turkey and continue to mix until ground turkey is half cooked. Add mushrooms and spices and continue to saute until turkey and mushrooms are cooked. Add in peeled whole tomatoes and break tomatoes down with spatula. Add in remaining tomato sauce, chili sauce and Worcestershire (optional). Reduce heat to low and simmer chili for about 2 hours.
Serve in a bowl and top with shredded cheddar cheese, green onion and/or sour cream. Pairs well with a side of garlic bread or corn bread muffin!
Enjoy and feel free to swap out the turkey for more diced vegetables of your choice to make this a meatless option.
