4 russet potatoes
1 cup chili
1 cup shredded cheddar cheese
Olive oil
Salt and pepper to taste
Toppings: sour cream, chopped bacon, diced tomatoes, green onions
Preheat oven to 450°
Put whole potatoes in the microwave for 2-3 minutes to soften them. Cut into thick slices and add to a sheetpan. Brush with olive oil on both sides and season with salt and pepper. Bake for 20 minutes. Flip the potatoes, season the other side and bake another 15 minutes
Take out and add the cheese on top of the slices , put back into the oven a couple of minutes until the cheese is melted.
Add 1-2 tablespoons of chili and other toppings as desired
