Chili Garlic Zoodles
Ingredients:
4 Zucchini (spiralized)
1 tsp Diamond Crystal Kosher Salt
1 Tbsp Vegetable oil
2 Scallions (thinly sliced. white parts for the sauce, green parts for garnish) 3 Garlic cloves (minced)
3 Tbsp Soy sauce
2 Tbsp Chili paste (Sambal Oelek or 1-2 Tbsp Sriracha)
2 Tbsp Light brown sugar
2 tsp Rice vinegar
1⁄2 Tbsp Sesame oil
1⁄2 Tbsp Ginger (freshly grated)
1⁄2 Tbsp Cornstarch
1 Tbsp Water
Sesame seeds (for garnish)
Instructions:
Spiralize the zucchini, then toss with Diamond Crystal Kosher Salt and place in a colander to allow the moisture to drain out.
In a large pan over medium heat, add the vegetable oil, then add the white parts of the scallions, and minced garlic, and sauté until fragrant for about 1 minute.
Next add the soy sauce, chili paste, brown sugar, chili garlic sauce, sesame oil, cornstarch, and water. Mix until combined and continue stirring as the sauce begins to thicken.
Add the zucchini noodles and carefully toss to combine, cooking for only about one minute or so until hot and the zucchini is cooked to your desired doneness.
Serve and garnish with scallion greens and sesame seeds. Enjoy!
