Baked Naan:
Ingredients for Dough:
Warm water as required
Sugar 1 tbsp
Dry yeast 1 packet
Warm milk ¼ cup
Plain yogurt ¼ cup
All-purpose flour 2 cups
Salt 1 tsp
For Topping:
Butter (melted) 1 stick (for brushing)
Garlic (minced) 4 cloves
Fresh cilantro for garnish
Method:
For the dough in a bowl mix all the ingredients and knead a dough with warm water. Then leave it for a while. Now punch the dough and release the air. Then spread the dough evenly and place it on a baking tray or tawa pan. Cook or bake until golden brown. Now brush with melted butter. In the end add garlic and cilantro. Serve hot.
Mutton Do Pyaza :
Ingredients:
Mutton (small pieces) 500 gm
Onions (sliced) 2
Ginger garlic paste 1 tbsp
Turmeric powder ½ tsp
Curd ½ cup
Tomatoes 2
Red chili powder 1 tbsp
Cumin powder 1 tsp
Coriander powder 1 tsp
All spice powder 1 tbsp
Green chilies (chopped) 2
Oil ½ cup
Salt to taste
Lemon juice 1 tsp
Onions (chopped) 2
Whole red chilies 6
Method:
Heat oil in a wok and sauté onions. Then add mutton and ginger garlic paste. Cook well. Now add yogurt, turmeric powder, red chili powder, coriander powder, cumin powder, all spice powder, salt along with ½ cup water. Cook well. Then add more water and cook until the mutton gets tender. Now add tomatoes. Then heat oil in a pan add chopped onions and whole red chilies. Temper well. In the end add chopped green chilies and lemon juice. Serve hot.
Vegetable Dumplings:
Ingredients For Dough:
All-purpose flour 1 cup
Water as required
Salt ½ tsp
For Filling:
Mushrooms (chopped) 1 cup
Garlic (minced) 2 cloves
Green capsicum (diced) 1
Corn ½ cup
Cilantro (chopped) 1 tbsp
Ginger (grated) ½ tsp
Soy sauce 2 tbsp
Black pepper to taste
Steamed rice 1 cup
For The Sauce:
Soy sauce ½ cup
Hot chili oil ¼ cup
Rice vinegar 1 tsp
Red chili flakes ½ tsp
Green coriander (chopped) 1 tbsp
Method:
For the dough in a bowl mix all the ingredients and knead the dough with water. Then allow it to rest. Now heat oil in a pan add chopped mushrooms, minced garlic, green capsicum, corn, chopped cilantro, grated ginger, soy sauce, black pepper and steamed rice. SautƩ well. Now roll the dough, add filling and make dumplings out of it. Then steam or cook in the water. Serve hot with the sauce.
For the sauce in a bowl add all the ingredients and mix well.
