Mini Bell Pepper Poppers with Bacon

Ingredients

Nonstick cooking spray, for the baking pan
1 pound mini bell peppers
8 ounces cream cheese, softened
1 1/2 cups shredded sharp Cheddar
5 slices crispy cooked bacon, finely chopped
2 teaspoons finely chopped Fresno pepper
1 tablespoon milk

Directions

Preheat the oven to 400 degrees F. Line a large rimmed baking pan with foil and spray lightly with cooking spray.

Cut the peppers in half lengthwise and remove the ribs and seeds. Arrange the peppers on the prepared baking pan cut-side up.

Mix the cream cheese, Cheddar, bacon, Fresno pepper and milk together in a bowl until very well mixed and soft.

Put the mixture into a resealable plastic bag (or a disposable pastry bag) and snip a corner to make an opening a little less than 1/2-inch across. Pipe a line of the cream cheese mixture into each of the peppers (the filling should not fill the whole pepper; it will spread as it cooks).
Bake until the peppers are tender and the filling is melted, about 15 minutes. Serve hot.

  2. I misread this as mini bacon pepper poppers. So wanted to see that, although i bet these are good too,. Plus mini bacon pepper poppers sounds like a tongue twister. ^-^

  5. there was zero texture left in those peppers. maybe 400 degrees for like 8 minutes? enough to melt the cheese mixture and warm the peppers. Those tiny peppers are already so tender they don't need cooking. When she went to take a bite, she almost couldn't hold it because it was drooping out of her hand and it was just mush when she did take a bite. Good idea, bad execution lol

  9. i don't have these things….and my tuck has a flat tire, and is buried in snow…..it looks yummy…..i am probably going to have to put on my snow shoes and a backpack, just two miles to town and back…they have jalapeno poppers at the gas station, the greasy ones in bread crumbs, but they don't have fresh produce….the fresh produce is an 18 mile round trip; twice over a bridge i don't like to cross on foot in winter….i wish i had bacon…it gets so cold this far inland, in the north, that i sometimes wish i lived further north where i could get some blubber to chew on..

    anyway, hope your pulling through ok Val…looks like your cutting back on the carbohydrate crack, and it's doing you some good…

    how is Alex mending from the loss? tell him i said sometimes i get stuck in life and death's paradoxical brain loops that end up tightening into knots…what helps me, is just reminding myself that somethings can't be "solved", and it's important i don't try to solve things i can't solve or i hurt myself, and the only solution at those times is admitting that the greater whole of life is not something to solve and so rightfully has no answers….hope that helps.

  13. Has Val ever thought of having gastric by-pass surgery? I'm thinking that she would have real success with her weight issue by doing that. She is (& always has been) a pretty woman. Health issues are the most urgent concerns for persons who are over-weight.
