White bean and poblano chili

2 poblano peppers (roasted, seeds and stems removed)
1 jalapeno
1 yellow onion
2 15 oz cans great northern beans (rinsed and drained)
3 cups vegetable broth
1/2 cup fresh cilantro
1 teaspoon cumin
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt(omit if need be, can sub miso paste)
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper

Optional toppings
Fresh lime, avocados or cilantro

Poblano queso

1 cup cashews (soaked overnight if not using vitamix, see notes)
2 tbspĀ nutritional yeast
1 tbspĀ lemon juice (freshly squeezed)
Pinch of salt
Pinch of black pepper
5 TbspĀ water(more if needed)
1 clove garlic
1 tbsp adobo seasoning
1/2 roasted poblano pepper (diced)

Roasted poblano and corn salad

4 ears of corn
2 poblano peppers
1 red bell pepper
1 red onion
3 green onions
1/2 cup cilantro
Juice of 3 limes
2 tbsp maple syrup
