OP, I love your inspiration to try something new and may hit up my local TB and see if they will make one.
I would love to see a breakfast style Mexican Pizza. Not sure what the exact ingredients should be that would keep things together. I know replacing the beans and beef with eggs and crumbled sausage doesn’t work too well as I had my local TB try it. Tasted great, just fell apart to easily.

So I kinda tried this last night at work, but altered it a little. I used a fried Flatbread for the bottom but kept the crunchy one for the top. A little but of nacho cheese in the middle with the beef and beans. Slapped so hard. Thanks for the idea!
