In this video I show 3 recipes for slow cooker or crock pot soups and chilis! Plus they add some extra nutritional veggies to make easy and healthy make-ahead dinners. First is a recipe for lentil taco soup (vegetarian), second is a recipe for stuffed pepper soup, and third is a recipe for a turkey and butternut squash enchilada chili.
All 3 of these are extremely easy to put together, and each one it is easy to use the base recipes and then customize to whatever flavors you might prefer. Great for meal preparing! These can store great in the freezer as well. These breakfast recipes are great for trying with kids, toddlers, and babies starting on solids. Lentil Taco Soup Ingredients:
1 medium onion, diced
1 jalepenos, diced (seeds removed)
4 cloves of garlic, minced
1 cup dry lentils
2 cups sweet potatoes, diced
2 cups carrots, diced
4 cups vegetable broth
1 tbsp cumin
1 tsp salt
Pepper to taste
2 tsp paprika
1 tsp oregano
1 tbsp chili powder
28oz crushed tomato
1 cup frozen corn (after cooked)
Add everything to crock pot.
Cook on high 3-4 hours.
Stuffed Pepper Soup Ingredients:
2 bell peppers, diced
1 lb ground beef, browned
1 1/2 tsp chili powder
1 1/2 tsp herbs de Provence
2 cloves of garlic, minced
1/2 cup quick brown rice
14.5oz can of fire roasted tomatoes
1 1/2 cup tomato sauce
1 medium onion, diced
4 cups beef broth
Add everything to crock pot.
Cook on low 6-8 hours.
Turkey & Butternut Squash Enchilada Chili Ingredients:
1 small onion, diced
2 cloves of garlic, minced
1 lb ground turkey, browned
1 tsp oregano
2 tsp chili powder
1 tbsp cumin
2 cups sweet potato, diced
15oz diced tomatoes
15oz black beans
15oz enchilada sauce or salsa
1 cup vegetable broth (or more for soupy)
Cook onion, garlic, turkey, and oregano in pan.
Add everything to crockpot.
Cook on low 7-8 hours or on high 4 hours.
