– 4 Large Bell Peppers
– 1 Lb Ground Beef ( I recommend Lean| Ground turkey also works)
– Avocado Oil
– 4 to 8 Provolone Cheese Slices
– 1 Package of Boil-in-the-Bag Rice
– Chicken Broth for Rice (Optional)
– 1/2 Can of Petite Diced Tomatoes
– 8 Oz Can Tomato Sauce
– 1/2 Cup Bell Peppers, Chopped
– 1 Yellow Onion, Chopped
– 1 Stalk of Celery, Diced
– 1 to 2 Tsp Cajun Seasoning
– 1 Tsp Onion Powder
– 1 Tsp Garlic Powder
– Black Pepper to Taste
– 1 Tbsp Hot Sauce

I came across your recipe and decided to give it a try, but I didn't have any sausage or the Cajun spice so I tweaked it a little with a few different spices, including my home processed cayenne pepper. I mixed ground pork in the hamburger. I also used Cholula green pepper hot sauce as that is what I had on hand. The tomatoes and peppers were both fresh from my garden. I have to say this turned out to be the best stuffed pepper I have ever made.

  12. Thanks for the mention of those of us who would LIKE to like bell peppers. Many years ago, my mom used to make stuffed bell peppers, and the filling was always great, but like you say, the mostly-raw pepper was both tough and kind of strong for my taste as a kid. It never occurred to either of us to bake the peppers ahead of stuffing them – but I am absolutely going to try these and see how it goes. This is particularly true since bell peppers are so easy to GROW! Whenever I can combine produce from my garden with a good, solid, and easy recipe like this one, I'm always pleased that I can have fun with the garden AND make a healthy, high-quality and economical meal.

  13. This was a great recipe on a classic. I used to make this in a slow cooker back in the day, but today I was looking for something easier and different. You hooked me with the unexpected addition of the Cajun seasoning and the hot sauce! I veganized it with fake beef and fake butter, served this with a baked potato using some of the filling as potato topping, and the whole dish was a home run hit. I have Louisiana Hot Sauce, so I personally added more at the dinner table, but the filling was perfect all around and you know how to get the peppers soft. Thank you so much!! Subscribed!

  14. So, I had to shop my pantry/freezer/fridge cuz I'm broke this week, lol, so I substituted:
    – beef for shrimp
    – petite diced tomatoes for Italian seasoned diced tomatoes (I chopped them in half while they were in the pan)
    – tomato sauce for cream of Jalapeno soup
    – Provolone for Mozzarella
    ….. And it still came out JUMPIN'!!! Thank you for being my guide! My first time they ever turned out good 💞

  16. I made stuffed Bell Peppers a couple of weeks ago. I use ground turkey. Your bell peppers looked so good. Yummy. I will try the avocado oil next time.

  17. These were literally the best peppers I’ve ever made. So much flavor! I didn’t add celery or sausage, and I used about 3/4 the can of tomatoes. But other than that I made it exactly like the recipe called for. Delicious!! ❤
