The BEST Pepper Lamb Chops in the WORLD!

Here’s the delicious recipe
Ingredients –
1kg Lamb chops
1/2 cup any vegetable oil
1/2 stick of Cinnamon
3 Cardamom
6 Cloves
3 medium Red Onions
2 tsp Turmeric
Salt to taste
1/4 cup vegetable oil
4 heaped tbsp Ginger garlic paste
2 tbsp Black Pepper corns
6-8 Dried red chillies (or 1 tbsp red Chilli powder)
3 tbsp Coriander seeds or dhaniya seeds
1 cup Yoghurt or curd
Small bunch of Curry leaves
Fresh coriander for garnish
– In a heated pan add 1/2 cup oil, cinnamon, cardamom, cloves and stir for 10 seconds.
– Add pepper corns, coriander seeds, dried red chilli and stir for a minute or until they’re slightly brown.

– Drain them from the oil and put aside on a plate.
– In the same oil, add onions and cook until they become light golden brown.
– Transfer them to a plate and leave aside to cool a little.
– In a blender, add the spices and blend into a fine powder.
– Add the onions to the blender with 1/4 cup water and blend into a thick fine paste.
– In a pan, add 1/4 cup oil, ginger garlic paste and sauté for 2 minutes.
– Add the onion spice paste and mix well.
– Add salt, turmeric and stir for another minute.
– In the remaining onion spice mixture in the blender, add a little water and pour this into the pan.
– Add the lamb chops, mix well and cover the lid and cook for a few minutes. Stir every few minutes and water will release from this as it keeps cooking.
– After 10 minutes, remove the lid and continue cooking. Test for salt at this stage and add if needed. Cook for a few more minutes.
– Transfer the chops to a pressure cooker and add yoghurt or curd.
– Add 1/2 cup water to the remaining mixture in the pan and add it into the pressure cooker.
– Cover the lid and cook until you get 3 whistles.
– Once all the pressure is released, remove the lid and add only the liquid to a pan and cook for 10-15 minutes or until it reduces and become a bit dry. At this stage, add curry leaves, mix well.
– Add the lamb chops and cook until it becomes dark brown in colour. This should take a few minutes.
– After a few minutes, they’re ready! Serve in a big platter, garnish with fresh coriander leaves and enjoy with some hot Jeera or cumin rice.

For those who don't know what is "lamb" = "a young sheep" . A baby perhaps. I am not sure if you still lick your fingers, well do it but imagine your own baby ths time.

We live in Bay Area, we tried this recipe with baby goat chops, came out really well.
I realized, my usual go-to lamb chop recipe uses the same ingredients in powder form, done in a pressure cooker, before transferring it to a non-stick pan. I guess there are more than 1 way to cook delicious food.

the lamb was a life before they made into this recipe.. maay be they should try this recipe with their dogs ..you never know it mite taste the same.
