Can We Clone The Doctor? This is going to be tough… There are (as the bottle says) 23 flavours in Dr Pepper; but what are they? The internet is full of theories, and lists; some of them make sense and some of them don’t. I have to admit – most of the lists contain ā€˜flavours’ that are compound flavours like ā€˜cola’ and ā€˜Root Beer’ so I don’t know how much I trust them.
There is also a formula book that surfaced from the Old Corner Drugstore in Waco Texas where Dr Pepper was invented. It contains a formula for ā€˜Dr Peppers Pepsin Bitters’ – but the handwriting is is scribbled that no-one can agree what it says.
Here is our first on-camera attempt:

Ingredients:
1L (4 cups) water
175g dried prunes
130g raspberries
2 vanilla beans, split
15g dry wintergreen leaves
8g whole cloves
2g peppercorns
20g chopped ginger
2.5g ground nutmeg
2g (around 10 pods) cardamom
6g cinnamon stick
4 juniper berries
3g cut and sifted wild cherry bark
3g liquorice bark
3g sarsaparilla
2g cut and sifted gentian root
800g sugar
10g citric acid
15 mL molasses
30 mL pure almond extract
10 mL cherry extract
5 mL lemon extract
5 mL orange extract
2 mL star anise extract

Method:
In a saucepan, combine the water, fruit, spices, and herbs.
Bring to a boil and then remove from the heat and add the cherry bark, liquorice bark, sarsaparilla, and gentian root.
Let steep for 30 to 45 minutes.
Strain out the solid ingredients and return the water to the saucepan.
Add the sugar, citric acid and molasses and heat until dissolved.
Remove the syrup from the heat.
Stir in the extracts.

45mL of syrup mixed into 350 mL of soda water is a great place to start – you can adjust based on your tastes.

  1. If I wanted to keep a recipe secret… you can almost be assured that if somebody figured out a key ingredient, then I'm going to deny it's in there. I'm also going to WAY over exaggerate the amount of ingredients to try and thwart anybody attempting to replicate. I wouldn't be surprised if Dr. Pepper is just 2-3 ingredients, total… with prunes being one of them.

  2. There really isn't an argument about whether or not Prunes and Plums.

    Thats like arguing over whether or not Raisins are Grapes.

    Prunes are literally just dried Plums. Same as Raisins are dried grapes.

  3. OK. Here's an odd duck of an old Ontario soda……….I can't find anyone that remembers this one….Sarasoda. It had 0.05% alcohol and and you could buy it at Avondale stores. Do you think you could replicate it?

  4. I doubt they rely on cherry too much since it's relatively expensive. I taste a little almond oil in Dr. Pepper. I've come pretty close with vanilla and almond oil.

  5. I'd love to have a caffeine-free Dr Pepper, but…not willing to source allllll those ingredients!

  6. I taste allspice and Angostura bitters, licorice, and the ginger and nutmeg. But I also am not a fan of it and hardly drink it

  7. It's marzipan or almond syrup. Just like amaretto is an almond liqour. Amaretto and coke is boozy Dr Pepper.

There is a generic Dr. Pepper that tastes exactly like it called Dr. Choice made by or sold under the Best Choice brand and distributed by Associated Wholesale Grocers Association and apparently whoever makes it may be on their way out of business due to supply chain issues, the store where I have been buying it has had a problem being able to get it because of supply chain issues. .

  9. The dr. Pepper thats made In Mexico comes in a glass bottle is waaaaaaayyyyyy better than cans of dr. Pepper. They are made with real surgar and not high fructose corn syrup. All the sodas made in Mexico are better especially the squirt!!! and the orange Fanta.

  10. I think you're on the right track. If it's supposed to smell like a pharmacy (soda fountain) from the late 1800s, the flavors have to be classics. (Some of these online lists include tomato and carrot!) You might also consider, caramel, honey, rum, and strawberry, as these are traditional flavors for sodas and medicines.
    Here's what I think the 23 flavors are: Allspice, amaretto (almond), anise, birch (wintergreen), black cherry bark, caramel, cardamom, cherry, cinnamon, clove, ginger, honey, juniper berry, lemon, licorice, molasses, nutmeg, peppercorn, prune, rum, sarsparilla, strawberry (not raspberry), and vanilla.

  11. As you're saying some of your ingredients, I'm thinking that I can definitely taste some of those things in there especially cinnamon, nutmeg, raspberries and vanilla. maybe not exactly but the same vibe.

  12. I am a Dr. Pepper fan, so I might be helping to say, I spend extra time sourcing a CAN of dr. Pepper, and don't care much for it in a plastic bottle. I taste the difference even in the tall can you find in a gas station stored by the beer, over a package of 12, 24 from grocery stores. Is that important, yeas to meea
