There’s nothing better than a pepper and egg sandwich on either hero rolls or round hard rolls! The oily peppers (used bell and Italian frying peppers) and onions are the perfect match for the soft scrambled eggs. I made a traditional pepper and egg hero and also showed how it can be made with some spicy cherry peppers and mozzarella to make it even better. I hope you enjoy this New York classic!

Yum!
Everything you make feels like home. Not everything is exact, but very close, and you acknowledge and respect those minor differences or preferences we all have. I love pepper and egg or asparagus and egg heroes. Growing up on Long Island, I didn't realize how unique the food I regularly enjoyed was. Many recipes are unique to where we grew up in NY/Long Island Italian households, but what great food we grew up with! And, I regularly make them and share them with my family passing down the recipes to this day. I'm working on a family cookbook. It just feels important to pass on the favorites. Thank you for sharing yours!
I’m having these for breakfast tomorrow. Seriously?! I want this now. *Drooling
ever add Mild italian sausages?
Looking through your videos, this stands out for me. My Mom made these on Fridays. No meat back then. My Dad’s favorite. She used the Italian frying peppers or cubanelles. Only time she used green bell was for stuffed peppers. Mom used peppers, onions, eggs, fresh parsley and a ton of grated Romano cheese. OMG…. Such heaven. Every mom and pop pizzeria makes the 12 inch sandwich. My family is from Staten Island, moved to NJ in the 50s. With background in Calabria, Naples and Abruzzi, your cooking really takes me back to Sunday dinners, grandpa’s homemade wine and nanny’s pastas. They are all gone now. I live in the south east, not a cubanelle pepper in sight. I miss them and I miss being Italian. ❤️
Omg. Jalapeño Tabasco on this is wonderful. Thank you
I live in a little town in CNY called Clinton. Got a little Italian restaurant here by the name of Alteris that has my absolute favorite sandwich called a Mort. Same idea, sweet and hot peppers, mozz, and pepperoni on a hoagie. Just makes me happy every damn time I have it.
Thanks for sharing Jim. Brings back memories of when I was a kid growing up in Brooklyn & Connecticut.

Good-man!!
This is such a great recipe. Thank you so much for this one. I now make this every Saturday. Love it on a sandwich roll with the Mezzetta sweet cherry peppers and mozzarella. And such a great tip to remove some of the bread to allow more room for the eggs, onion, and peppers. Your channel is absolutely my fav YT cooking channel.
The best sub I ever had!!!
In Chicago, we char the peppers then mix them into the scramble.
Very interesting
Try adding potatoes to that! 😊❤❤❤
I'm Italian and my mom and Aunt's made these all the time. I miss this. Thank you!
I had my first pepper and eggs sandwich a few days ago. Let me tell you I've been wanting it everyday since. It was fantastic. So tasty.
Growing up on long island in the early 80s every deli there made what called a breakfast special which was a egg with various choice of meats and chesses on a buttered kaiser bun with a cub of coffee and small can of juice for 2 dollars including tax. Here in Tampa there no such sandwich and that due to the bread as Tampa water makes the bread chewy which is great for a Cubin sandwich but not for an egg sandwich so sadly I could not even make this but sounds very good.
boy, does that look good..i'm going to make these 👍🙂
Now I get Junior Soprano
Thanks for including the names for the types of peppers used. I'm really interested in peppers and hot sauce so it's nice being able to easily look up peppers
mamma mia this looks so good! making it asap! 🙂
I absolutely love the idea of removing some of the breading inside the roll. Ingenious!
