Hack the recipe a tiny bit by adding a tsp of bakng soda to the boiling water, this will change the water's PH level, and create tiny cracks in the potatoes. Because tiny cracks means more crunch.
What cutting board are you using?
Do they have "snack packs" in America? Its basically the Australian equivalent but middle eastern influenced rather than asian. Has hot chips with chicken salt and cheese topped with a mix of kebab(gyros) shaved chicken and lamp topped with hot chilli & garlic sauce. Commonly eaten at 4am when drunk.
Such an unholy trinity of English, Irish and Australian accents all in one. Is that Boston or a little more south?

I've suffered jalepeno eye before also…..put milk on that paper towel instead of water. Instant relief when it touches your eye!!
You might not need it, but you'll definitely taste the improvement when you add some MSG to the seasoning.

Important to note that in Ireland we have 2 main types of curry sauce, theres a curry sauce from a traditional burger and chips takeaway, and then theres an entirely different type that youll find in chinese takeaways. The difference is night and day.

Your poor knives.
When you get any kind of chili in your eyes, use someone's "hair" and the hair will absorb all the chili out of your eyes.
The alkaloids that make peppers hot are more soluble in fat, than in plain water. When my friend got capsaicin in his eye, he rinsed it out with whole milk. The milk fat quickly soothed the burning, and the milk’s water content helped flush the irritant away.

I did the same thing to my eyes making salsa. I ended up stopping up the sink, filling it with water, dumping in some milk, and dunking my head in the milk-water. It was the only thing that stopped the burning.
I never understood why people can't touch raw chicken lol. Your hands are 10x better tools than a spoon or tongs. My wife can't touch raw meat so I am always employed to do it nowadays because I get frustrated seeing her use a fork or spatula lmao.
