#ದುಕ್ರಾಮಾಸ್
For 1 KG of pork, 4 onions, 2 garlic, 5 chilies, 1/2 inch ginger. Lime sized tamarind pulp or vinegar as required.
Pepper masala
1 tbsp black pepper
Cinnamon
1 Cardamom
5 Cloves
1 bay leaf
3 tbsp coriander seeds
1 tbsp cumin seeds
1/4 tbsp methi seeds
1/4 tbsp fennel
Dry roast above ingredients and powder.
Marinate meat with salt, turmeric powder, tamarind water, and ground masala powder.
Keep the marination for minimum 30 minutes.
Add bay leaf amd cook the meat.
When it comes to a boil add chopped onion,garlic, chilies,ginger and cook till meat and onion is soft.
Finally add crushed pepper powder as per your spice level and switch off flame.
