CHILI GARLIC PANCIT PALABOK RECIPE
INGREDIENTS:

STIR FRY:
1/2 cup olive oil
2 heads – garlic
10 pcs – spicy chili (save this chili garlic oil)
260 grams – 8pcs SHRIMPS (add: 1/2 tsp salt)
360 grams – PORK BELLY (marinated)
1 pc.- white onions
1 tsp – dark soy sauce
70 grams – 3 pcs sm.SMOKED FISH/tinapa (fried/shredded)
454 grams – 2packs CORNSTARCH STICKS/ NOODLES (boil in water/ 1 teaspoonful salt/ follow packaging instruction)
***Note: add & combine all chili garlic oil on drained cooked noodles
100 grams – deep fried FISH SKIN or chicharon
4 pcs – hardboiled EGGS
4 stalks – spring onion
2 pcs – lemons

PALABOK.SAUCE:
4 tbsp – olive oil
3 cups – water
1 tbsp – white pepper powder
1/2 tsp – brown sugar
2 tbsp – Filipino fish sauce/Patis
2 tbsp – liquid seasoning
2 cups – coconut milk
1 tsp – chicken powder or shrimp cube

PORK BELLY MARINADE:
2 tbsp – Chinese ricewine
1 tbsp – liquid seasoning
1/2 tbsp – brown sugar
1 tsp – white pepper powder
1 tsp – cornstarch

ANNATTO MIX:
1/4 cup – cornstarch
1/3 cup – annatto seeds powder
1/2 cup – water

Cooking time: approximately 1 hour
Serving: 8+ people
