Charles Phan’s Caramelized Black Pepper Chicken | Genius Recipes



When Kristen found out that Chef Charles Phan happened to be in town just as she was diving into his Genius black pepper chicken recipe, she (of course) had to invite him over to cook the flavorful Vietnamese dish with her. INGREDIENTS
1 pound skinless, boneless chicken thighs, cut into 1-inch pieces
1 tablespoon canola oil
Kosher salt
1/2 cup dark brown sugar
1/4 cup fish sauce (nam pla)
1/4 cup water
3 tablespoons rice vinegar
1 shallot, thinly sliced
2 – 4 teaspoons thinly julienned fresh ginger
1 teaspoon minced garlic
2 fresh Thai chiles, halved, or dried red chiles
1 teaspoon black pepper, coarsely ground in a mortar and pestle
4 cilantro sprigs
Steamed jasmine rice for serving

  2. We are never shown the end consistency of the sauce! I appreciate the warm personalities and the chef's story, but I came here to learn technique. There's no shot of the sauce, and no shot of the end result of the dish. What's the point?

  3. Like the recipe. But annoyed at the sound quality. Watching this off my TV I can barely hear him over the background music however her voice is very loud in comparison

  4. That's a LOT of sugar. Maybe a tablespoon of molasses would give you all the flavor, and only a fraction of the sucrose. He seems like a lovely person, but this video is a miss.

  5. Perhaps it is because I'm living in the age of the 'rona but that guy touched his face and mouth as he was cooking way too much for my taste.

  6. I agree the video did not show enough of the cooking process, or even the finished product. It was still a nice video overall, but this felt like a great setup with no punchline.

  7. a wonderful video to pull from…enjoyed their conversation and learning about his background..wow…learned a lot from just observation..never was interested in Pad Thai at home but this surely changed my thoughts…and so am about to make this dish, thanks to Kristen and Charlie Phan! thanks mucho.

  10. oh man, his cookbook is on my shelf and is so worn from use. i'd be so stoked to meet him. i made his crab noodle dish the other day for the 100th time and was eating the leftovers cold out of the fridge the next morning for breakfast. so simple but so good. during my brief twitter experience i tweeted him and he wrote back and was so nice.
    so jealous you have his cell phone number. can i get it? if he comes to Austin, i'll take him to some bomb places once this hot covid mess is over. :))))

  11. Only a white person would eat Kho without rice. The dish was made to accompany rice not as a solo dish. The rice balance out the saltiness / sweet of the dish. In fact many Asian dishes is made that way. The slanted door is a fantastic modern take on Vietnamese cuisine.
