Mother Teresa’s Veal & Peppers – Excellent Veal Recipe!
Veal is a protein we don’t cook very often, but this recipe from our mother Teresa’s Veal and Peppers seemed like an ideal comfort-food meal to prepare for today’s menu. Mom guides us through making this excellent veal recipe that has been in our family for many decades. We used a veal scaloppini cut for this veal & peppers recipe, which included a variety of fresh sweet peppers. Once the veal is added to the peppers and onions, the veal is super tender and the thick sauce is richly flavored with the wonderful combination of slowly cooked meat, tomato sauce and sweet peppers, and onions. Great served over pasta, rice or even on a crusty sandwich bread.

  7. I was going to make this with veal cubes that I usually cook all afternoon, but the store didn't have them. I bought the scallopini cut and was wondering how long to cook it. Thanks.

    I make mine with equal parts pepper and onion slices. I'll add chopped onions to the broth now. Today, I'm substituting fresh, garden picked Jersey tomato chunks for the sauce! Glad you snuck in a couple small hot peppers, veal needs a little kick compared to sausage. I'm sure mom didn't mind, she just won't admit it!
