Chipotle White Bean Turkey Chili recipe
It’s a bowlful of hearty, smoky, soul warming chili and most definitely the perfect thing after a day of raking up all these darn leaves!!!

Ingredients:

1 tablespoon olive oil

1 cup diced Yellow Onion

2 to 3 cloves fresh garlic, minced

2 pounds Ground Turkey

1 tablespoon Chili Powder

1 teaspoon Sugar

2 teaspoons Kosher Salt, more or less to taste

1-1/4 teaspoon ground Cumin

1/2 teaspoon Oregano, rubbed in palm

2 Chipotle Peppers in Adobo, minced {use 3 chipotles for more smoky heat}

1 teaspoon Adobo Sauce from can

3 {15 ounce} cans Great Northern Beans, drained and rinsed {soak method below}

2 {15 ounce} cans Tomato Sauce

1/4 cup chopped Cilantro

GARNISH:

Cilantro

Sour Cream

Cheddar Cheese

Lime Wedges

Tortilla Chips

Directions:

Add olive oil to a Dutch oven and warm over medium heat. Add in onion and sautƩ for 5-8 minutes until soft. Add in garlic and cook for one minute. Add the ground turkey into the pot and cook until no longer pink.

Measure and add in chili powder, cumin, oregano, salt and sugar. Stir and cook for 1 minute.

Next add in the minced chipotles and the adobo sauce. Add in the beans and tomato sauce, cover and simmer on low for 30 minutes.

Add in the chopped cilantro, stir and serve with as many toppings as your heart desires!

**If you’re up to soaking your own beans here’s how I do it: Place 1-1/2 cups dried great northern beans in a large pot, cover with 6 cups of hot water and bring to a boil for two minutes. Drain and rinse before adding beans back into the pot. Cover with 6 cups hot water again and bring to a boil over high heat. Once at a boil, reduce the temperature to medium-low and simmer for 1 to 1½ hours or until tender. Drain the beans and use right away or refrigerate for a few days until ready to use.
