made this 3 times now..i usually saute a lb of mushrooms separately and add them with the corn..and this time i had red bell n Serrano peppers ready to harvest just outside my kitchen window . used my air fryer to roast them…WOW!!!!!!!!

You can use dried mushrooms, ground in a small coffee grinder. Grind very fine and it will add a meaty dimension also.
