Malaysian Spicy Chilli Chicken- Ayam Masak Berlada (Hot & Spicy)

This is one of my all time fave comfort food from home, well anything with chillies is my kind of food 🙂 So, i am sharing with you the secret to this delectable dish. This chicken is usually fried, however, i am baking it in the oven instead and the results are the same, delicious 🙂 Who can resist delicious chicken with a tangy and hot mustardy sauce with lemongrass flavours. Ayam berlada( Spicy chilli chicken) :serves 2

Step 1 :
2 chicken legs
1 tablespoon turmeric powder
1 1/2 teaspoon salt (season the chicken)
1 tablespoon vegetable oil

Preheat oven 200 C/400F
-Bake the chicken for 1 hour (cook 30 mins on each side)

Sambal Blend:
Step (2)
In a blender add all the ingredients below & blitz into a smooth paste
2 whole onions
3-4 garlic cloves
1 lemongrass
1 inch ginger
7-10 red chillies (fresh)
1-2 tablespoon chili paste (hottest)
118 ml water (1/2 cup)

Step (3):
Sambal Sauce:
2 tablespoon vegetable oil
Add the sambal paste above into the frying pan
Stir & cook on medium heat for 5 mins
1 teaspoon salt
2-3 teaspoon sugar
1 teaspoon tamarind paste
3 lime leaves
Cook continuously on low heat & stirring for another 8-10 mins until sauce has thickened to a darker color. Lastly, coat the cooked chicken with the sambal & serve 🙂
