This time, I tried to cook one of the best noodle soup of Afghanistan.
“Aush”means “noodle” in Afghani, but it’s come to signify several kinds of homemade Afghan soups.The soups are made rich with yogurt and spices — perfect for a cold winter’s meal.
I made my own version and I used kale leaves instead of spinach,but the main spices I didn’t change nor omitted to retain the savory soup.I used pasta instead of homemade afghan noodle, you can use egg noodles also if you want.You can add more water, mint or cayenne pepper at your desire.
