Salt and Pepper Chicken Wings THE BEST RECIPE



Ingredients:
* Adjust measurements accordingly
– 1 lb chicken wings and drummettes
– 1 cup cornstarch
– 1 cup all purpose flour
– 6 cloves garlic
– 2 jalapenos
– 2 green onions
– neutral-flavored frying oil (e.g. canola or peanut oil)
– 1 egg white
– 1 tbsp soy sauce
– 1 tbsp shaoxing rice cooking wine
– 2 tsp white pepper
– 2 tbsp salt
– 2 tbsp black pepper

Instructions:
1) Cut the tips off the chicken wing. Discard or save for stock.
2) At the joint, separate the wings from the drummette. Place the both into a bowl.
3) Marinate your chicken with an egg white, soy sauce, cooking wine, white pepper and cornstarch. The marinade should be slightly wet as it’ll help the dry batter stick to the chicken.
4) Slice your jalapeƱos.
5) Mince your garlic.
6) Slice your green onions.
7) In a separate bowl, mix equal parts cornstarch and flour. This will serve as the dry batter.
8) Evenly coat your chicken wings and drummettes in the dry batter. Shake off any excess.
9) Deep fry your chicken at 375F for 8 to 10 minutes. Once done, remove and set aside.
10) Don’t overcrowd the wok. Once a batch is done cooking, remove any fried tidbits from the oil and reheat the oil for the next batch.
11) Stir-fry your jalapeƱos, garlic and green onions until slightly brown. Optionally add some butter for some extra depth of flavor.
12) Add you cooked chicken.
13) Season with salt and pepper.
14) Toss to mix. Voila you’re done!

  3. I think that is stupid ingredient with a lot of SALT.! and both kinds of PEPPER ( black and white pepper) …. for only 1 lb of chicken …eat and die soon… don’t do it if you don’t know
