Easy weeknight meal one pot meal.
I made this before picking up my kids and doing errands.
Came home to a hot dinner.
Ingredients:
1-2 pounds ground beef
1 yellow onion, diced
1 clove garlic, minced
¼ cup tomato paste
14.5 ounces canned diced tomatoes
1/4 cup beef broth
2 tablespoon chili powder
1 teaspoon cumin
1 teaspoon salt or 2 tbsp fish sauce (more if needed)
Toppings:
shredded cheese
sour cream
green onions
avocados
Directions:
Let pot heat up in saute mode until it says “hot”
Add some oil and saute the onions until translucent (3 to 5 minutes)
Add in ground beef, garlic, tomato paste, diced tomatoes, beef broth, chili powder, cumin, and salt/fish sauce.
Mix well and cook on high pressure for 6 minutes.
Allow the pressure to release naturally.
Taste and adjust seasoning if needed.
Add cheese, sour cream, green onions, and avocado.
