How To Make Mac & Cheese Stuffed Peppers | Stuffed Pepper Recipe

INGREDIENTS:
4-6 bell peppers – top, seeds and veins removed
1 lb. elbow macaroni – cooked shy of 2-3 minutes
4oz. New York Sharp cheddar cheese
1 cup mild cheddar cheese
1/2 cup Mozzarella cheese
4 Tbsp. butter
4 Tbsp. flour
2 cups milk
1/2 cup cream or half and half
1/4 tsp. white or black pepper
salt to taste
sprinkle of cayenne pepper – optional

In a pan on medium heat add the butter and melt.
Add the flour, cook and whisk for a minute.

Pour in the milk and whisk.
Add the seasonings and cream.
Cook and stir until sauce thickens and then turn off the heat.
Add the cheese and stir until melted.
Add the macaroni, stir until combined.

Fill peppers with mac and cheese.
Top with extra cheese and crumb topping. (1/2 cup panko crumbs and 4 Tbsp. butter).

Bake 400 degrees for 20-30 minutes.
Place foil on top if crumb topping getting too brown before peppers are done.

Let rest and serve.
Enjoy.
