Chicken Stuffed Bell Peppers ~Using Leftover Chicken
INGREDIENTS:
4 cups cooked diced chicken
1 cup finely chopped red onion
1 cup chopped celery
1 cup chopped carrot
1 cup chopped mushrooms
salt and pepper
oil
1 – 28 oz. can tomato sauce
1 – 28 oz. can diced tomatoes
1/4 cup grated cheddar cheese
1/4 cup grated parmesan cheese
1 tsp. Italian seasonings
1 tsp. Oregano
1 tbsp. parsley
1/2 tsp. black pepper
1 cup cup grated cheddar cheese for top
1 cup grated parmesan cheese for top
Preheat oven to 375 degrees.
Prep bell peppers…clean, halve and take out seeds and veins.
In a saucepan on medium heat add some oil, onions, celery, carrots, mushroom, salt and pepper.
Cook for 5-7 minutes or until veggies are tender.
Add minced garlic, stir and cook for 15 seconds and remove
from the heat to cool.
In a bowl combine chicken, cooked veggies, corn, tomatoes,
cheese and seasonings.. Mix well.
Fill each pepper half with chicken mixture. Top with combined
tomato sauce and remaining diced tomatoes.
Cover and bake at 375 degrees for 45 minutes.
Remove from oven. Top chicken stuffed peppers with
grated cheese.
Bake uncovered for 15 minutes or until cheese is melted.
Enjoy.

Very nice use of leftovers. Love the fact you don't pad the dish with rice~ I guess that's why I've never really liked stuffed bell peppers. However, yours are fantastic! Thanks for sharing. I liked the corn and cheese in it, love it!
