Chicken with Bell Peppers Dinner-Chicken Breast cooked with Bell Peppers + Garlic + Green Onion + Tomatoes & Spices; Served over Wheat Rice & Broccoli & Corn
Ingredients:
2 Pieces of Chicken Breasts-cut into strips
4 Slices Red Bell Pepper
4 Slices Green Bell Pepper
2 white part of Green Onion Sliced
1 Tomato-Slices
2 Small Garlic Cloves-minced
Brown or Wheat Rice (or preferred Rice)
Broccoli Florets
2 Tbsp. Unsalted Butter
1/2 of 15.25 oz. Can Corn-may use Corn on Cob or Frozen Corn
2 Tsp. Cumin (Comino)
1 Tsp. Garlic Powder
2 Tsp. Paprika
2 Tbsp. Olive Oil
2 Tsp. Salt
1 Tsp. Pepper
1/3 Cup Chicken Broth
For Rice: In a small pot for boiling rice, pour in 5 Cups of water & 1 Cup of Rice, let boil on medium to high heat for 15 to 18 minutes until rice is cooked, turn off heat; set aside;
For Broccoli Florets: Cut out of Stem & begin to Heat to Boil a pot with 2 Cups of Water, once water comes to a boil, place in carefully up to 10 pieces of Broccoli Florets, cover with lid & let cook for 4 to 5 minutes, turn off heat, drain out water, add in butter & cover;set aside
For Corn: Place in pan, set heat to Medium heat, pour in 1/2 of Can of Corn with its water, let cook for 4 to 5 minutes until water cooks down, turn off heat;set aside
To Cook Chicken: In a cooking pan, place on heat to medium heat, pour in 1 & 1/2 Tbsp of Olive Oil & place in Chicken Strips; Stir & place a lid on pan & cook Chicken for 3 minutes, then add salt & pepper, stir, then add in red & green bell pepper slices, stir & cover & let cook for 5 minutes; then add in minced garlic & onion, stir & cook by watching this step closely for 30 seconds, then stir in Tomatoes & 1/2 Tbsp Olive Oil; hear it sizzle, Sprinkle in Cumin, Garlic Powder & Paprika & stir in for 5 seconds, place lid & let cook for 2 minutes; add in 1/3 Cup Chicken Broth, Cover & let cook for 4 to 5 minutes; let cook into chicken;Turn off heat
Serve Chicken with Bell Peppers over Rice & Side of Broccoli & Corn & Enjoy
