INGREDIENTS:
FOR BEEF STOCK (YAKHNI)
– Beef cubes with bone 1/2 kg
– Onion 1 medium
– Ginger 2 tbsp
– Garlic 6-7 clove
– Salt 1/2 tbsp
– Button chilies 6-7
– Bay leaves 1
– Cumin seeds 1/2 tbsp
– Cinnamon stick 2-3
– Black pepper 15-16
– Clove 10-12
– Green cardamom 5-6
– Coriander seeds 2 tbsp
– Fennel seeds 1 tbsp
– Water 6-8 cups
For Pulao Ingredients:
– Onion 1 medium( fry till light brown)
– Ginger garlic paste 1 tbsp
– Green chili paste 1 tbsp
– Tomato cubes 1 big
– Yogurt 1 tbsp
– Bay leaves 2
– Cumin seeds 1 tsp
– Green cardamom 4-5
– Black cardamom 1-2
– Clove 8-10
– Black pepper 8-10
– Star anise (badyan) 3-4
– Red chili pwd 1/2 tbsp
– Salt 2 tbsp ( taste)
– Rice 3 cups ( wash and soaked 15 minutes )
– Prepared stock ( yakhni) 4-1/2 cup
METHOD:
FOR BEEF STOCK ( yakhni)
– In pan all stock ingredients and water ,bring it to boil and cover it until meat is tender .
– You can use muslin cloth for whole spices .
– When meat is fully tender then remove from stock and set aside
– Strain the stock and discard all spices, onion ,ginger garlic.
– Stock should be 4-1/2 cup.
Making pulao:
– In pot add oil , all whole spices and little fry.
– Add ginger garlic paste and green chili paste and fry.
– Add cooked beef and fry well.
– Now add chili powder.
– Add tomatoes ,yogurt and mix well.
– Fry well until tomatoes become soft.
– Add prepared stock ,bring it to boil then add rice.
– Mix well and add salt , cover the lid .
– Cooked until water reduced to half cup.
– Add fry onions on top and cover it and steam cook for 20 minutes.
Tip :
Use 1.5 cup extra water from rice.
use same cup for rice and stock/ water for any pulao.
