Plant-based Bean Chili Cook Along – Flexitarian101

**Option to add less than 2 cans of beans if your stomach is not used to them

Ingredients (4 servings):
1-2 tbsp of oil
1 onion, diced
2-3 garlic cloves, minced
1 tbsp chili powder
1 tbsp cumin, ground
1 tsp dried oregano
2 tsp turmeric, ground
1 tsp chili flakes or 1 fresh chili or jalapeno (optional)
1-2 tsp salt
1 bell peppers, diced
2 carrots, diced
2 tbsp tomato puree
1 cans chopped tomatoes (could add extra tomatoes & less beans for a less hearty version)
2 cans of beans, drained & rinsed
1 ¾ – 2 cups of stock
1 tbsp maple syrup (optional)
1 cup frozen or canned corn

To Serve (optional): bread, rice, sour cream, cilantro
