Stuffed Bell Pepper Recipe



This is an easy to make favorite in our house! And yes I did really get a “yum” out of my 4 year old and a “Mom I love this” from my 6 year old!

Super easy recipe:
Ingredients-
3 bell peppers
1 1/2 cups cooked rice
1 lb ground turkey
1 small onion
2 cloves of garlic
1 Tbsp taco seasoning
2 Tbsp tomato paste
Chicken or vegetable broth (optional)
1 can of black beans
salt and pepper

Preparation-
1. Cook brown rice or use rice leftovers from a previous meal.
2. Cut peppers in half and remove stems. Cook to soften in the oven at 400 degrees for 15min.
3. While the peppers cook, brown turkey meat, then add onions, garlic, taco seasoning, and tomato paste. Cook for about 5 minutes more. I also typically add some vegetable or chicken broth here to keep things moist.
4. When the rice is done, add rice and a can of black beans to the turkey. Add salt and pepper to taste.
5. Add mixture to peppers, then top with chees (I like using feta, cotija, or Monterey Jack). Then place into the oven for 15min.

You can also add more veggies! I sometimes saute kale or spinach in with the meat. Mushrooms or squash would be great additions as well!
