Here is what you’ll need:
Ingredients:
½ cup of onion, chopped
4-5 garlic cloves, peeled
2/3 cup water
600g mutton, cut into pieces
½ tsp salt
1 tbsp crushed coriander seeds
1 tbsp chili flakes
½ tsp garam masala
1 tsp Kashmiri red chili powder
½ tsp pepper
¼ tsp black salt (kala namak)
1½ tbsp lemon juice
1 tsp garlic paste
1 tsp ginger paste
½ tsp chaat masala
1 tsp roasted cumin powder
2 tbsp corn flour
Oil for frying
Chaat masala and lemon juice for garnish
Instructions:
In a pressure cooker, add onion, garlic cloves, water, mutton, and salt. Cook until the mutton is tender. This should take approximately 25-30 minutes, but time may vary depending on your pressure cooker.
Once cooked, open the lid and check the amount of gravy. If there’s a lot, try to reduce it a bit, but do not dry it out completely as it will work as a binding agent later.
In a separate pan, mix crushed coriander seeds, chili flakes, garam masala, Kashmiri red chili, pepper, and black salt. Mix well.
Add lemon juice, garlic paste, and ginger paste to the spice mixture and mix well.
Add the cooked mutton to the spice mixture and mix until all the mutton pieces are well coated.
Add chaat masala and roasted cumin powder to the mutton and mix again.
Sprinkle corn flour over the mutton and mix to ensure all pieces are evenly coated.
Heat oil in a separate pan. Once hot, reduce the heat to medium.
Fry the mutton pieces in the oil for 4-5 minutes or until they turn crispy. Ensure the oil is hot but not so hot that it immediately changes the color of the mutton.
Once done, transfer the crispy mutton pieces to a serving plate. Sprinkle with some chaat masala and a squeeze of lemon juice.
Serve hot and enjoy with your favorite raita.
