Potatoes in Spiced Yogurt :

Ingredients

Potatoes peeled, cubed and boiled ½ kg
Oil ½ cup
Yogurt ½ cup
Salt 1 tsp
Roasted &crushed cumin 1tsp
Chat masala ½ tsp
Tamarind pulp ¼ cup
Chili powder 1 tsp
Coriander leaves 2 tsp
Turmeric ½ tsp
Sugar 1 tsp
Garlic paste ½ tsp
Curry leaves 10-12

METHOD

Peel potatoes, cut in cubes and boil. Heat oil, add curry leaves, garlic paste, fry for 1 min. Then add dry spices with boiled potatoes, half cup water, cook till dry. Now add tamarind pulp, yogurt, remove from fire, mix, serve garnished with chopped greens.

Hunzai Handi:

Ingredients

Boneless chicken ½ kg
Chili powder 2 tsp
Salt 1 tsp
Oil ½ cup
Ginger garlic 1 tbsp
Tomatoes 4 blended and cooked till thick
Tomato puree 2 tbsp
Fennel ½ tsp
Makhani masala 1 tbsp
Cream 1 packet
Oregano leaves 1 tsp
Chili powder 1 tsp
Oil as required

METHOD

Marinate chicken with salt and chili powder, then deep fry, keep aside. Heat oil in a handi, add ginger garlic paste, cooked tomato puree, makhani masala, tomato puree fry well, add fried chicken with salt, cream, oregano, chili powder, mix and remove, serve with nan.

Banana Split Dessert:

Ingredients

Biscuit crumbs 2 cups
Melted butter 3 ounces
Caster sugar ½ cup
Cream cheese 8 ounces
Vanilla essence 1 tsp
Whipped cream 1 ½ cup
Bananas 3 sliced
Pineapple 1 tin
Strawberry sliced 1 ½ cup
Chopped walnuts ½ cup
Chocolate syrup ¼ cups
Glazed cherries for decoration

METHOD

Mix together biscuit crumbs and melted butter, press into a rectangular pyrex dish, bake for 10 mins, remove and cool. Beat cream cheese, vanilla and half cup caster sugar until creamy, fold in 1 cup of whipped cream, spread cream cheese mixture evenly over biscuit crust, arrange banana slices in a single layer, top bananas with pineapple crush, arrange strawberries in a single layer, decorate with remaining whipped cream, refrigerate, before serving sprinkle with crushed walnuts, chocolate syrup, top with cherries, serve chilled.
