Celebrate with these Sweet and Tangy Pork Sausage Chili Dogs with Pepper Jack Cheese.

1 teaspoon olive oil
3 Italian pork sausage
1/4 cup fire-roasted crushed tomatoes
1/4 cup salsa verde
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika powder
1/2 teaspoon chili powder
1 tablespoon brown sugar
1 tablesppon dijon or brown mustard
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 long potato rolls
4 tablespoons shredded pepper jack cheese
1 tablespoon scallions, sliced
-Preheat oven to 400 degrees Fahrenheit.
-Crumble one of the sausage links into a mixing bowl.
-Heat a saute pan with olive oil on medium heat.
-Toast potato rolls open side down for two to three minutes.
-Remove the buns and place them in a baking dish opened facing up.
-Sear and cook the other two Italian sausage links on two sides, about 3 minutes on each side, and cover to cook faster between turns.
-Lower heat to medium-low and continue to cook covered for 4 to 6 minutes.
-Remove sausages and place in buns.
-Remove any excess oil from the pan.
-Add and cook crumbled sausage in the hot saute pan.
-Remove and drain the excess oil.
-Add fire-roasted crushed tomatoes, salsa verde, cumin, smoked paprika powder, chili powder, brown sugar, mustard, salt, and black pepper.
-Reduce chili sauce until it becomes thick and most liquid evaporatesāabout 5 to 8 minutes.
-Pour the chili over the sausages.
-Sprinkle on the cheese.
-Bake in the oven for 5 minutes or until the cheese is partially golden brown.
-Remove from the oven and garnish with scallions

I love chili dogs, i like to add a bit of fritos corn chips for some crunch, and of course sour cream. (Mexicans love that shit)
