VEGAN BURRITO BOWL RECIPE || HEALTHY & SIMPLE

Hello!

This is my take on a super delicious, healthy, and simple vegan burrito bowl. This recipe is totally customizable as well!

(3-4 servings)

Tofu “meat” :
1 package extra firm tofu
1 1/2 tbsp. soy sauce
1/2 tsp. EACH garlic powder, onion powder, chili powder, nutritional yeast
1/4 tsp. EACH cumin, paprika
Optional : pinch of red pepper flakes
Gently press tofu in a clean towel to drain some excess moisture. Place into a medium bowl and crumble with a fork or your hands, leaving bite sized pieces. Add in spices and soy sauce, toss around until evenly coated. Spread on a lined baking sheet and place into a 400° F oven. Bake for 25 min, then toss around the tofu. Place back into the oven for 5-10 min until golden brown.

Sweet potato (optional) :
Cube up potatoes, place on a lined baking sheet or coat in a small amount of olive oil. You may add s+p for more flavor of course! Add to a 400° F oven and bake about 40-45 minutes, flipping them half way through.

Rice :
Add 1 cup of whatever rice you prefer and cook according to package instructions. I added in fresh black pepper and turmeric for some extra health benefits. You can also cook your rice in vegetable stock for more flavor! I’ve added chili powder, garlic powder, and nutritional yeast as well for more flavor. You can also keep it plain, whatever you prefer!

Beans :
1 can black beans (or any kind you prefer)
1/4 tsp EACH garlic powder, onion powder, chili powder, cumin
s+p to taste
Add everything to a pan and cook on medium heat until warmed up. You may also sauté fresh onions, garlic, and jalapeño for even more flavor (instead of the powders)!

Build your bowl!
Toppings to add :
Hummus, guacamole, salsa, lettuce, lime juice, vegan cheese, corn, sautĂ©ed peppers and onions, vegan sour cream, etc…
I would have showed you the toppings I use but this was actually being made as meal prep for my non-vegan boyfriend! Feel free to customize this recipe and make it suit your preferences!
