Pepper Jack Upside Down Puff Pastry
The seasoning is a collaboration of my friend @the_dudenetwork with @redbeardseasoning. This seasoning really got me because of the ancho, guajillo, and chipotle chili flakes! Itās perfect and not salty like the everything bagel seasoning! That zesty flavor really goes on anything!

Ingredients:
1 puff pastry pack
6 eggs
1 red bell pepper
3 jalapeƱos
1/2 onion
12 slices of pepper Jack cheese
Zesty Anything bagel seasoning
Preparation:
Cut the peppers and onions small diced, mix them, and place them on a sheet pan with parchment paper distributed on six piles apart each other; put on top of each pile a slice of pepper Jack and then cut on 6 parts the puff pastry and cover each pile with one part of puff pastry. Brush the top of the pastry with olive or cooking oil and sprinkle some of the zesty anything seasoning on top; Bake at 380 for 15 minutes or until golden brown and crispy. To make the pouched eggs, in a pot with water on medium heat, add the egg, strain each, and put it in the water straight from the strainer until the whites are firm. Take out each egg and place it over paper towels to get rid of the excess water. When the pastries are done, flip them and put two pouched eggs on top and a slice of pepper jack; put it in the oven until the cheese melts.
